Lunch: Amy's Three bean and pasta soup with added tofu for extra protein. Broccoli too :)
Afternoon Snack: Homemade chewy granola bar and carrots. I found this granola bar recipe on vegweb and it's delicious. All my coworkers asked for the recipe and make their own version and their kids even love it!
Dinner: Blackbean veggie burger on Dave's killer bread. For condiments I used hummus, cucumber and arugula
I didn't take a picture of my evening snack, but usually I'll have something like a piece of fruit or toast with almond butter along with soy hot cocoa (made with soy milk and unsweetened cocoa).
woooooow!!!! im so proud of you for committing to your vegan lifestyle! your meals and snacks look AMAZINGLY TASTY!! they're giving me some ideas for my own meals/snacks! that pasta/tofu soup looks to-die-for (is there anywhere i could find the recipe??) and i love your toppings for your blackbean veggie burger! never thought about adding hummus and arugula! wow, i am so impressed by your daily meals! like on your other blog, i thought you may be eating things like celery and carrot sticks, and thats not because i didn't have faith in you, i just don't know what vegans eat! so im glad you opened up my eyes to the endless options! much love, xoxo a
ReplyDeleteHi! I've been vegan since 2009, vegetarian since 2002 and have a ton of history with anorexia and still more or less present eating disorder. Cool that you're vegan. I'll follow you!
